  • 2 medium sweet potatoes
  • 1 lb chicken breast
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces. Toss with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast for about 25-30 minutes until tender and lightly caramelized.
  4. Season the chicken breast with salt and pepper. Cook over medium heat for 6-7 minutes on each side until cooked through.
  5. Remove the chicken from heat and let it rest. Shred using two forks and toss with BBQ sauce.
  6. Assemble the bowl with roasted sweet potatoes at the bottom, topped with BBQ chicken and your choice of toppings.
