A hearty and comforting BBQ Chicken Sweet Potato Bowl that combines sweet roasted potatoes with smoky BBQ chicken, avocado, and corn.

  • 2 chicken breasts
  • 1 cup BBQ sauce
  • 2 large sweet potatoes
  • 1 avocado, diced
  • 1 cup corn (fresh or canned)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread them out on a baking sheet and bake for 25-30 minutes.
  3. Cook the chicken breasts in a skillet over medium heat for about 6-7 minutes on each side until browned and cooked through.
  4. Remove the chicken from the skillet and toss it in the BBQ sauce until well coated.
  5. To serve, place the BBQ chicken over the roasted sweet potatoes and top with diced avocado and corn. Garnish with fresh cilantro or parsley if desired.

Notes

For even roasting, cut sweet potatoes into similar-sized cubes. Marinating chicken in BBQ sauce enhances flavor.
