A comforting one-pan meal featuring tender beef, colorful vegetables, and perfectly cooked rice, seasoned with soy sauce for a flavorful experience.

Ingredients

  • 2 cups cooked rice
  • 1 lb beef, cut into strips
  • 1 cup mixed vegetables (carrots, peas, bell pepper, etc.)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Sizzle the beef: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the beef strips and cook until brown. Remove from skillet and set aside.
  2. Stir-fry the vegetables: In the same skillet, add remaining oil, minced garlic, and mixed vegetables. Stir-fry until vibrant and softened.
  3. Scramble the eggs: Push the veggies to one side of the skillet, pour in the beaten eggs, and scramble until fully cooked.
  4. Combine the rice: Add the cooked rice, mixing well with the vegetables and eggs.
  5. Flavor it up: Drizzle soy sauce over the rice and stir to combine thoroughly. Cook for an additional 2-3 minutes.
  6. Return the beef: Add the cooked beef back to the skillet and mix everything together. Season with salt and pepper to taste.
  7. Garnish and serve: Garnish with chopped green onions just before serving.

Notes

For best results, use day-old rice or allow fresh rice to cool completely to prevent mushiness.
