Beef Stuffed Cabbage Rolls

A family favorite, these Beef Stuffed Cabbage Rolls are filled with seasoned beef and rice, wrapped in tender cabbage leaves, and simmered in a tangy tomato sauce.

  • 1 large head green cabbage
  • 2 tablespoons olive oil
  • 1 cup finely diced yellow onion
  • 2 garlic cloves, minced
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can crushed tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound ground beef (85/15)
  • 1 cup cooked white rice
  • ½ cup finely diced yellow onion
  • 1 garlic clove, minced
  • 1 large egg
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons finely chopped fresh parsley
  • ¼ teaspoon paprika
  • â…› teaspoon cayenne pepper (optional)

Instructions

  1. Preheat the oven to 350°F and spray a 9×13 inch baking dish with non-stick cooking spray.
  2. Boil the cabbage for 4-5 minutes until the leaves are pliable, then peel off 12 leaves.
  3. Heat 2 tablespoons of olive oil in a large skillet, add 1 cup of diced yellow onion, and cook until softened, about 5 minutes. Add 2 minced garlic cloves and cook for an additional minute. Stir in tomato sauce, crushed tomatoes, Worcestershire sauce, sugar, salt, and pepper. Simmer for 10-15 minutes.
  4. Combine ground beef, cooked rice, ½ cup of diced yellow onion, 1 minced garlic clove, egg, salt, black pepper, parsley, paprika, and cayenne pepper in a large bowl. Mix until well incorporated.
  5. Cut the tough rib from each cabbage leaf. Place 3-4 tablespoons of filling on each leaf, fold the sides in, and roll tightly.
  6. Pour half of the tomato sauce into the bottom of the baking dish, place cabbage rolls seam-side down, and pour remaining sauce over the rolls.
  7. Cover with foil and bake for 60-75 minutes until internal temperature reaches 165°F.
  8. Let the rolls rest for 5-10 minutes before garnishing with fresh parsley and serving.

Notes

For a vegetarian version, substitute ground beef with lentils or quinoa. You can prepare the rolls a day in advance and refrigerate before baking.
