  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup cold butter
  • 3/4 cup milk
  • 1 pound breakfast sausage
  • 2 tablespoons all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C). In a bowl, mix flour, baking powder, and salt. Cut in the cold butter until the mixture becomes crumbly. Stir in the milk until just combined.
  2. Roll out the dough to about 1 inch thick. Cut into biscuits with a biscuit cutter or a glass and place them on a baking sheet. Bake for 15-20 minutes until the biscuits turn a lovely golden brown.
  3. Cook the breakfast sausage in a skillet over medium heat until it’s browned and crumbly, about 5-7 minutes.
  4. Make the gravy by sprinkling 2 tablespoons of flour over the sausage and stirring for about a minute. Gradually pour in 2 cups of milk, stirring continuously until the mixture thickens, about 5-7 minutes.
  5. Season the gravy with salt and pepper to taste. Serve it generously over the warm, flaky biscuits.

Notes

For a vegetarian option, swap the sausage for plant-based sausage and use vegetable broth instead of milk for the gravy. Consider adding spices like cayenne pepper for an extra kick.
