  • 1 cup full-fat cottage cheese, well drained
  • 2 large eggs, lightly beaten
  • ½ cup almond flour (or all-purpose flour)
  • 2 tablespoons honey or pure maple syrup, plus extra for drizzling
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • Zest of 1 large lemon (about 1 tablespoon)
  • 1 cup fresh blueberries, rinsed and patted dry
  • Cooking spray or melted butter for greasing muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin.
  2. Whisk together the cottage cheese and eggs until mostly smooth.
  3. Add the honey, vanilla, and lemon zest; stir until combined.
  4. Sift the almond flour, baking powder, and salt in another bowl.
  5. Combine the dry mixture with the wet ingredients, folding gently.
  6. Fold in the blueberries, reserving some for topping.
  7. Fill the muffin cups about two-thirds full and top with reserved blueberries.
  8. Bake for 20 to 25 minutes until lightly golden and a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.
  10. Drizzle with honey or sprinkle with powdered sugar before serving.

Notes

These bites can be stored in an airtight container in the fridge for up to 3 days. They are also freezer-friendly.
