A quick and easy Bok Choy and Mushroom Stir Fry that captures the comfort of home-cooked meals with vibrant colors and fragrant aromas.

  • 2 heads Bok choy
  • 8 ounces Mushrooms
  • 3 cloves Garlic
  • 1 tablespoon minced Ginger
  • 3 tablespoons Soy sauce
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Prep the Greens: Wash the bok choy thoroughly under cold running water. Trim off the bottom ends of the bok choy and separate the leaves. Cut the stems into bite-sized pieces and leave the leaves whole.
  2. Clean the Mushrooms: Clean the mushrooms by wiping them with a damp paper towel to remove any dirt. Then, slice the mushrooms thinly.
  3. Mince the Aromatics: Peel and mince the garlic cloves, followed by peeling and mincing the ginger finely.
  4. Prepare the Sauce: In a small bowl, mix together soy sauce, minced ginger, minced garlic, salt, and black pepper. Set aside.
  5. Sauté the Mushrooms: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced mushrooms and stir fry for 3-4 minutes.
  6. Add Bok Choy Stems: Add the bok choy stems to the skillet and continue to stir fry for another 2-3 minutes.
  7. Incorporate Bok Choy Leaves: Add the bok choy leaves to the skillet and cook for 1-2 minutes until they are slightly wilted.
  8. Combine and Serve: Pour the soy sauce mixture over the vegetables in the skillet, stir well to combine, and cook for an additional minute. Remove from heat and transfer to a serving dish.

Notes
