Ingredients

  • Flour tortillas
  • Scrambled eggs
  • Cooked breakfast sausage or bacon
  • Shredded cheese
  • Hash browns
  • Sour cream
  • Salsa
  • Avocado or guacamole (optional)

Instructions

  1. Cook the scrambled eggs and sausage by whisking eggs and adding to a skillet with sausage or bacon.
  2. Prepare the tortilla by laying it flat on a clean surface.
  3. Layer scrambled eggs, sausage, cheese, hash browns, sour cream, and salsa on one half of the tortilla.
  4. Fold the tortilla over the fillings, then fold in the sides and roll it tightly.
  5. Cook until crispy in a skillet over medium heat for about 3-4 minutes on each side.
  6. Serve warm with additional salsa on the side.

Notes

Leftovers can be stored in the fridge for up to two days. Reheat in a skillet to keep them crispy.
