A delightful twist on traditional breakfast fare, featuring fluffy baked sweet potatoes filled with crispy bacon, eggs, and gooey cheese.

  • 2 large sweet potatoes
  • 4 slices of bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and poke several holes in them with a fork. Place them on a baking sheet and bake for 45 minutes to 1 hour until tender.
  3. Cook the bacon in a skillet until crispy, then crumble it.
  4. Fry the eggs in the same skillet according to your preference.
  5. Cut the sweet potatoes in half and scoop out some flesh to create a well.
  6. Fill each sweet potato half with the crispy bacon and cooked eggs.
  7. Sprinkle cheese on top and return to the oven for 5-10 minutes until melted.
  8. Season with salt and pepper, and garnish with chopped green onions if desired.

Notes

These breakfast sweet potatoes are excellent on their own, but pair well with a fresh fruit salad or yogurt for a complete meal.
