  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch nutmeg
  • 2 tablespoons chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package directions until al dente.
  2. Add the broccoli florets to the pot during the last 3 minutes of cooking to ensure they remain tender and vibrant.
  3. Drain the pasta and broccoli together, allowing the steamy goodness to escape, and then set aside.
  4. In the same pot, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add butter and let it melt. Then, whisk in flour to form a roux, cooking for about 1 minute while stirring constantly.
  6. Gradually pour in milk while whisking to prevent lumps. Keep cooking until the sauce thickens to a creamy consistency.
  7. Stir in the cheddar cheese and Parmesan until fully melted and smooth.
  8. Season the cheese sauce with salt, pepper, and a pinch of nutmeg.
  9. Return the drained pasta and broccoli to the pot. Toss until everything is evenly coated in your luscious cheese sauce.
  10. Serve immediately, garnished with chopped parsley.
