A healthier twist on classic Buffalo chicken wings using cauliflower and tender chicken, perfect for cozy nights or gatherings.

  • 1 pound of boneless, skinless chicken breasts
  • 1 head of cauliflower, cut into florets
  • 1 cup of Buffalo sauce
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 1/2 cup of Greek yogurt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the cauliflower florets in a large pot until tender, about 5-7 minutes. Drain and set aside.
  3. Sauté the diced chicken in a skillet over medium heat until no longer pink, about 8-10 minutes.
  4. Combine the cooked chicken, cauliflower, Buffalo sauce, Greek yogurt, garlic powder, onion powder, salt, and pepper in a large bowl.
  5. Transfer the mixture into a greased baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Garnish with chopped green onions before serving.

Notes

For extra heat, add a dash of your favorite hot sauce. Store leftovers in an airtight container for up to 3 days.
