Delicious and comforting Buffalo Chicken Stuffed Peppers filled with shredded chicken, creamy cheese, and a kick of buffalo sauce.

Ingredients

  • 4 large bell peppers
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a bowl, combine shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese, mixing well.
  4. Season the mixture with salt and pepper, tasting for flavor.
  5. Fill each bell pepper generously with the buffalo chicken mixture.
  6. Drizzle the tops with olive oil.
  7. Sprinkle the remaining cheddar cheese on top of the peppers.
  8. Cover the baking dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  10. Serve warm.

Leftovers can be stored in an airtight container for up to three days or frozen for up to three months.
