A wholesome meal featuring sweet potatoes and chicken glazed with maple Dijon for a delightful balance of flavors.

Ingredients

Scale
  • 2 chicken breasts
  • 2 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes, then toss them in olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25 minutes or until tender.
  3. While the sweet potatoes are roasting, in a bowl, mix together the maple syrup and Dijon mustard.
  4. Season the chicken breasts with salt and pepper, then brush the maple Dijon mixture over them.
  5. Heat a skillet over medium heat and cook the chicken for about 5-7 minutes on each side until fully cooked (internal temperature should reach 165°F / 74°C).
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it.
  7. Remove the sweet potatoes from the oven and divide them into bowls. Top with sliced chicken, and garnish with chopped parsley. Serve and enjoy!

Notes

Ensure even cutting of sweet potatoes for uniform cooking. Honey can be used as a substitute for maple syrup, but it will alter the flavor slightly.
