  • 8 ounces pasta (e.g., fettuccine or penne)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh herbs (e.g., basil or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper. Spread it evenly on a baking sheet and roast for 25-30 minutes until tender.
  3. Cook the pasta according to package instructions. Drain and set aside.
  4. Heat a little olive oil over medium heat in a large skillet and add the minced garlic, sautéing until fragrant.
  5. Add the roasted butternut squash and cream to the skillet, stirring to combine. Let simmer.
  6. Toss the cooked pasta in the skillet with the sauce, mixing in the grated Parmesan cheese.
  7. Adjust the seasoning with salt and pepper to your liking.
  8. Serve warm, garnished with fresh herbs and additional Parmesan if desired.

Notes

For added depth, try toasting the garlic just until it starts to brown before adding the cream.
