  • 1 pound andouille sausage, sliced
  • 1 pound chicken thighs, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 2 tablespoons Cajun seasoning
  • 2 bay leaves
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked rice for serving

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Stir in flour and cook, stirring constantly, until the roux is a dark caramel color.
  2. Add chopped onion, bell pepper, celery, and garlic. Sauté until soft.
  3. Stir in the sausage and chicken, cooking until browned.
  4. Add diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for at least 30 minutes.
  5. Remove bay leaves and serve gumbo over cooked rice, garnished with chopped green onions.

Notes

Serve with crusty French bread or cornbread for dipping.
