Ingredients

  • 2 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup cooked chicken breast, diced
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped pecans or walnuts
  • 1 medium apple, diced (preferably a tart variety like Granny Smith)
  • 1/2 red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette dressing

Instructions

  1. Prepare the Greens by washing and drying the mixed salad greens thoroughly.
  2. Cook the Chicken (if not using pre-cooked) in a skillet over medium heat until no longer pink and cool before dicing.
  3. Dice the Apple, leaving the skin on for color.
  4. Slice the Onion and add it to the bowl with the greens.
  5. Combine the Chicken, cranberries, and nuts with the salad greens.
  6. Crumble the Feta over the salad.
  7. Dress the salad with balsamic vinaigrette and toss gently.
  8. Taste and adjust seasoning if necessary.
  9. Serve immediately or refrigerate for up to 30 minutes.
