Caprese Stuffed Chicken Breast

A flavorful dish that combines the freshness of basil, the creaminess of mozzarella, and the sweetness of tomatoes, all stuffed inside juicy chicken breasts.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the diced mozzarella, halved cherry tomatoes, chopped basil, balsamic vinegar, salt, and pepper in a bowl. Stir until well mixed.
  3. Cut a pocket in each chicken breast, being careful not to slice all the way through.
  4. Stuff each chicken breast with the mozzarella mixture, packing it in snugly.
  5. Brush the outside of the chicken with olive oil and season with salt and pepper.
  6. Bake the chicken in a baking dish for 25-30 minutes, or until they reach an internal temperature of 165°F (75°C).
  7. Serve once baked, garnished with additional basil if desired.

Notes

Pair with a light salad or garlic mashed potatoes. Store leftovers in an airtight container for up to 3 days.
