  • 6 large eggs
  • 6 egg whites
  • 4 oz shredded mozzarella cheese
  • Pepperoni slices (2–3 per muffin)
  • 1 teaspoon garlic powder (optional)
  • 2 teaspoons oregano (optional)
  • ½ teaspoon onion powder (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a standard muffin tin.
  2. Whisk together the eggs, egg whites, garlic powder, oregano, and onion powder in a large bowl.
  3. Stir in the shredded mozzarella cheese until well combined.
  4. Pour the mixture into your muffin cups, filling each about ¾ full.
  5. Place 2–3 slices of pepperoni on top of each muffin.
  6. Bake the muffins for 20–25 minutes or until they are set and lightly golden.
  7. Allow the muffins to cool slightly before serving or storing.

Notes

These muffins can be stored in an airtight container in the refrigerator for up to a week or frozen for up to three months.
