Delightful muffins blending sweet raisins and honey with wholesome carrots, perfect for breakfast or snacks.

  • 1 cup cottage cheese (blended smooth)
  • 2 large eggs
  • 1 ½ cups almond flour
  • ½ cup grated carrots (patted dry)
  • 2 tbsp raisins
  • ½ tsp cinnamon
  • ¼ cup honey
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease 10 muffin cups.
  2. Blend the cottage cheese until it’s smooth.
  3. Whisk together the blended cottage cheese, eggs, honey, and cinnamon until well combined.
  4. Stir in the almond flour and baking powder until just combined.
  5. Fold in the grated carrots and raisins.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to three days, or freeze for up to three months.
