  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the two large carrots using a vegetable peeler to remove the outer skin.
  2. Grate the carrots using a fine grater or a box grater until they are shredded into thin strips.
  3. Place the grated carrots into a medium-sized bowl.
  4. Combine one tablespoon of sesame oil, one tablespoon of rice vinegar, and one tablespoon of soy sauce in a small bowl.
  5. Add one teaspoon of honey to the mixture and stir until fully dissolved.
  6. Grate one teaspoon of fresh ginger and add it to the small bowl.
  7. Pour the dressing over the grated carrots in the large bowl.
  8. Toss the carrots gently in the dressing to ensure they are evenly coated.
  9. Sprinkle one teaspoon of sesame seeds over the salad.
  10. Add a quarter teaspoon of freshly ground black pepper to the salad.
  11. Chop one tablespoon of fresh cilantro and sprinkle it over the salad.
  12. Toss everything together one more time and let sit for a few minutes.
  13. Serve immediately or refrigerate for up to an hour before serving.
