  • 1 medium head cauliflower, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with a little oil or cooking spray.
  2. Boil the cauliflower in a large pot of boiling water for about 5 minutes, or until just tender. Drain and let cool slightly.
  3. Combine the cheddar cheese, cottage cheese, eggs, grated Parmesan, garlic powder, onion powder, black pepper, and salt in a large mixing bowl. Mix until well combined.
  4. Fold in the cooked cauliflower and chopped green onions until everything is evenly coated.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 25–30 minutes, or until the top is golden and bubbly.
  7. Let it cool for a few minutes before slicing and serving.
