  • 1 cup cottage cheese, well-drained
  • 1/4 cup milk (whole or low-fat)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon salt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon chopped fresh herbs (like parsley or chives, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a loaf pan (9×5 inches) with butter or non-stick spray.
  3. Mix the cottage cheese, milk, and eggs in a bowl until fully combined.
  4. Whisk together the flour, baking powder, garlic powder, and salt in another bowl.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Stir in the shredded cheese and chopped herbs until evenly distributed.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 40-45 minutes, or until the top is golden and a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
