  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup cooked ham or bacon (optional)
  • 2 tablespoons chopped green onions or chives
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Boil the potatoes in a pot of salted water until fork-tender, about 10 to 15 minutes. Drain and set aside.
  2. Crisp the potatoes in a skillet with melted butter for 5 to 7 minutes until golden.
  3. Add the cooked ham or bacon if using and heat through for 2 to 3 minutes.
  4. Whisk the eggs with milk, salt, and pepper in a bowl until smooth.
  5. Scramble the egg mixture with the potatoes in the skillet until cooked through, about 5 minutes.
  6. Add the shredded cheese and cover, cooking until melted, about 2 to 3 minutes.
  7. Garnish with chopped green onions or chives and serve warm.

Notes
