  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped chives for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes to the skillet and let them cook until golden and crispy, about 10-15 minutes.
  3. If using ham or bacon, toss it in with the potatoes and cook until heated through.
  4. Whisk together the eggs with a pinch of salt and pepper in a separate bowl.
  5. Pour the whisked eggs over the cooked potatoes and meat in the skillet.
  6. Scramble everything together gently until the eggs are cooked to your preferred doneness.
  7. Remove from heat and sprinkle shredded cheddar cheese on top.
  8. Serve hot, garnished with chopped chives if desired.
