Warm, fluffy cinnamon rolls filled with juicy cherries and topped with a decadent cream cheese frosting.

  • 1/3 cup granulated sugar (67g)
  • 1/4 cup cold water (60g)
  • 2 tbsp corn starch (20g)
  • 1/4 cup warm water (60g)
  • 1 tsp active dry yeast (6g)
  • 3/4 cup whole milk (180g)
  • 1/3 cup granulated sugar (67g)
  • 2 large eggs
  • 4 1/2 cups bread flour (540g)
  • 1/2 tsp salt (3g)
  • 6 tbsp unsalted butter, room temperature
  • 4 tbsp unsalted butter, room temperature (57g)
  • 3 oz cream cheese, room temperature (85g)
  • 2 cups powdered sugar (260g)
  • 2 tsp vanilla extract
  • 13 tbsp whole milk (20-60g)

Instructions

  1. Make the Cherry Filling: Combine the frozen cherries and granulated sugar in a saucepan over medium heat. Bring to a gentle boil and mix the cold water with cornstarch until smooth, then stir it into the cherries until thickened. Cool and refrigerate.
  2. Activate the Yeast: Mix the warm water with the active dry yeast and a pinch of sugar. Let it sit for about 15 minutes until bubbly.
  3. Make the Dough: Combine the yeast mixture with whole milk, sugar, and eggs in a large bowl. Sift the bread flour and salt into this blend, stirring gently. Add the butter and knead for about 10 minutes.
  4. First Rise: Transfer the dough into a greased bowl, cover, and let it rise in a warm place for about 1 hour.
  5. Shape the Rolls: Roll the dough into a rectangle, spread the cherry filling, roll into a log, slice into 12 rolls, and place them in a greased baking dish.
  6. Second Rise: Allow the rolls to rise in a warm spot for about 30 minutes.
  7. Bake & Frost: Preheat oven to 350°F (177°C) and bake rolls for 30-35 minutes. Prepare frosting while cooling, then frost rolls generously.
