Homemade chewy granola bars that are nutritious and customizable, perfect for snacking on-the-go.

Ingredients

  • 2 cups rolled oats
  • ½ cup honey or maple syrup
  • ½ cup almond butter (or any nut butter of your choice)
  • ¼ cup almond slices (or any nuts)
  • ½ cup chopped dried fruits (like apricots or raisins)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup chocolate chips (optional)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Combine Oats and Nuts: In a large mixing bowl, mix the rolled oats and almond slices.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the almond butter, honey or maple syrup, vanilla extract, and salt.
  4. Combine the Mixtures: Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Add Dried Fruits and Chocolate Chips: Fold in the chopped dried fruits and chocolate chips.
  6. Press Into the Pan: Line an 8×8 inch baking dish with parchment paper and spread the mixture evenly.
  7. Bake to Perfection: Bake for about 20 minutes or until golden brown.
  8. Cool and Cut: Let the bars cool for at least 10 minutes and cut into bars.

Notes

Store in an airtight container at room temperature for up to one week or refrigerate for up to two weeks. Can be frozen for longer storage.
