  • 6 to 8 pieces thin-sliced chicken breasts
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 1/2 cups buttermilk
  • 1 large egg
  • Vegetable or canola oil for frying
  • 1/4 cup reserved oil from frying the chicken
  • 1/3 cup all-purpose flour for gravy
  • 2 cups milk for gravy
  • Salt and pepper for gravy

Instructions

  1. Pound the chicken breasts to an even thickness of about 1/2 inch.
  2. Combine 2 cups of flour with baking powder, baking soda, salt, black pepper, and garlic powder in one bowl.
  3. Whisk together the buttermilk, egg, and hot sauce in another bowl.
  4. Dip each chicken breast into the buttermilk mixture, then dredge in the seasoned flour.
  5. Heat vegetable or canola oil in a large skillet to 350°F.
  6. Carefully place the chicken in the hot oil and fry for 3-4 minutes on each side.
  7. Transfer the fried chicken to a plate lined with paper towels.
  8. Pour off all but 1/4 cup of oil from the skillet and whisk in 1/3 cup of flour.
  9. Add 2 cups of milk while whisking to prevent lumps and cook until thickened.

Notes

Serve hot with creamy gravy. Pair with sides like mashed potatoes or biscuits.
