A lighter, flavorful twist on traditional meatloaf, made with ground chicken, garlic, and parmesan cheese.

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan to ensure easy cleanup later.
  2. Combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, mozzarella cheese, parsley, minced garlic, and chopped onion in a large mixing bowl. Stir it together gently.
  3. Whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper in a separate bowl.
  4. Pour the egg mixture into the bowl with the chicken mixture. Gently mix until combined.
  5. Transfer the meatloaf mixture onto the prepared baking sheet or into the loaf pan. Shape it into a loaf.
  6. Mix together the garlic powder and additional 1/4 cup grated Parmesan cheese. Sprinkle this evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 45-50 minutes, until the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let it rest for about 10 minutes before slicing.
  9. Serve warm with your favorite sides.

Notes

This dish pairs well with creamy mashed potatoes or a fresh green salad. Leftovers can be stored in the refrigerator for up to 4 days.
