A delightful and easy recipe for chicken salad served in flaky croissants, perfect for lunches or gatherings.

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt (optional)
  • 1/2 cup celery, diced
  • 1/4 cup red grapes, halved
  • 1/4 cup almonds or walnuts, chopped (optional)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 croissants
  • Lettuce leaves (optional)

Instructions

  1. Combine the shredded chicken, mayonnaise, Greek yogurt, diced celery, halved grapes, and nuts in a large bowl. Add the Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Prepare the croissants by slicing them in half lengthwise. Optionally, lay down a lettuce leaf on the bottom half.
  3. Spoon a generous portion of the chicken salad mixture onto the bottom croissant halves.
  4. Place the top halves of the croissants on each filled bottom half and press down gently.
  5. Serve immediately and enjoy!

Notes

For the best texture, assemble the croissants just before serving. Leftover chicken salad can be stored in the fridge for up to 3 days.
