  • 3 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Pita bread or wraps (for serving)

Instructions

  1. Prepare the Marinade: In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, pepper, and lemon juice.
  2. Coat the Chicken: Add the chicken thighs to the marinade and cover the bowl with plastic wrap. Refrigerate for at least 1 hour, preferably overnight.
  3. Preheat Your Oven: Preheat your oven to 400°F (200°C).
  4. Roast the Chicken: Place the marinated chicken on a baking sheet and roast for 25-30 minutes until cooked through.
  5. Rest and Slice: Allow the chicken to rest before slicing it into strips.
