A comforting, creamy chicken pasta casserole that’s easy to prepare and perfect for family gatherings.

Ingredients

  • 300 g cooked chicken breast (shredded or diced)
  • 200 g spaghetti (or any pasta of your choice)
  • 1 cup chicken broth (low-sodium preferred) (240ml)
  • 1 cup heavy cream (240ml)
  • 1 cup grated mozzarella cheese (for creaminess, 120g)
  • 1 cup mushrooms (sliced, any variety you prefer) (100g)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil (for sautéing)
  • Salt and pepper (to taste)
  • ½ cup breadcrumbs (for topping) (60g)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Cook your Pasta by boiling a large pot of water. Once it’s boiling, add your spaghetti or preferred pasta and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. Sauté the Aromatics in a large skillet with olive oil over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent, about 3-4 minutes.
  3. Add the Mushrooms, sautéing until tender and golden, about 5-6 minutes.
  4. Combine Chicken and Broth by folding in cooked chicken and chicken broth. Let it simmer and season with salt and pepper.
  5. Bring on the Cream by pouring in heavy cream and stirring in half of the mozzarella cheese until melted.
  6. Mix Pasta into the Sauce, gently tossing until coated. Use reserved pasta water if needed to loosen the mixture.
  7. Prepare for Baking by preheating your oven to 180°C (350°F) and transferring the mixture into a greased baking dish.
  8. Add Topping and Cheese by sprinkling remaining mozzarella and breadcrumbs on top.
  9. Bake to Perfection for about 20-25 minutes until the top is golden brown and bubbly.
  10. Cool and Garnish by letting it sit for 5 minutes before adding fresh parsley on top.

Notes

This dish pairs well with a crisp green salad and garlic bread. Can be made ahead of time and stored in the fridge for up to 24 hours before baking.
