  • 2 tablespoons chipotle sauce
  • 1 tablespoon olive oil
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh veggies for topping (such as lettuce, avocado, and cilantro)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the chipotle sauce, black beans, corn, and bell pepper. Cook for an additional 3-5 minutes until heated through.
  4. Layer cooked rice as a base in serving bowls.
  5. Spoon the chipotle chicken mixture over the rice.
  6. Top with fresh veggies of your choice.
  7. Season with salt and pepper to taste.

Notes

Make sure your chicken is diced into uniform pieces for even cooking. Fresh lime juice can brighten the dish.
