Delicate almond meringue cookies filled with rich chocolate ganache, perfect for any occasion.

  • 1 cup almond flour
  • 2 cups powdered sugar
  • 4 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 ounces dark chocolate
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift the almond flour and powdered sugar together in a bowl.
  3. Whip the egg whites until they form soft peaks, then gradually add granulated sugar and continue beating until stiff peaks form.
  4. Combine the almond flour mixture with the egg whites until well combined.
  5. Pipe small circles onto the prepared baking sheet using a piping bag.
  6. Rest the macarons at room temperature for 30 minutes to form a skin.
  7. Bake for 15-18 minutes, then cool completely on the baking sheet.
  8. Create the ganache by heating the heavy cream and pouring it over the chopped dark chocolate.
  9. Fill the cooled macarons with the ganache and sandwich them together gently.
  10. Enhance the flavors by letting the filled macarons sit in the refrigerator for a day before serving.

Notes

For best results, use room temperature egg whites and ensure all equipment is clean and dry.
