Delicate French chocolate macarons with a crispy shell and a soft, chewy center, perfect for any occasion.

Ingredients

  • 1 cup almond flour
  • 1.5 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Buttercream or ganache for filling, to taste

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together the almond flour, powdered sugar, and cocoa powder.
  3. Whip the egg whites with a pinch of salt until frothy, then gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Fold the sifted dry ingredients into the meringue until just combined.
  5. Transfer the batter into a piping bag fitted with a round tip.
  6. Pipe small circles onto the prepared baking sheets and let sit at room temperature for about 30 minutes.
  7. Bake for 15-18 minutes until risen and firm to the touch, then allow to cool completely.
  8. Assemble by sandwiching two macaron shells together with buttercream or ganache.

Notes

Store in an airtight container at room temperature for up to 3 days, in the fridge for up to a week, or freeze for a month.
