Instructions

  1. Melt chocolate and butter in a heatproof bowl over simmering water, stirring until smooth, then let cool slightly.
  2. Whisk egg yolks and sugar in a separate bowl until pale and thick, then stir in vanilla extract.
  3. Combine the melted chocolate mixture with the egg yolk mixture, stirring until well combined.
  4. Beat egg whites with a pinch of salt until soft peaks form.
  5. Fold the beaten egg whites into the chocolate mixture, being careful not to deflate.
  6. Whip heavy cream until soft peaks form.
  7. Incorporate the whipped cream into the chocolate mixture until no streaks remain.
  8. Spoon the mixture into individual serving dishes or one large bowl.
  9. Chill in the refrigerator for at least 2 hours, or until set.
