Delicious cupcakes that combine rich chocolate flavor with the classic elements of tiramisu, topped with creamy mascarpone frosting.

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1/4 cup milk
  • 8 ounces mascarpone cheese, chilled
  • 1/2 cup heavy cream, chilled
  • 1/4 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon coffee liqueur (optional)
  • 1 teaspoon cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy—about 3 minutes.
  4. Add the eggs one at a time, mixing well after each, and stir in vanilla extract.
  5. Combine the brewed coffee and milk in a measuring cup.
  6. Mix the dry ingredients and coffee-milk mixture alternately into the butter mixture, starting and ending with the dry ingredients.
  7. Fill each liner about two-thirds full with the batter.
  8. Bake for 18–20 minutes or until a toothpick comes out clean.
  9. Cool the cupcakes completely in the tin before transferring them to a wire rack.
  10. Prepare the frosting by beating the mascarpone cheese, heavy cream, powdered sugar, cocoa powder, vanilla extract, and optional coffee liqueur until stiff peaks form.
  11. Frost the cooled cupcakes and dust with cocoa powder before serving.

Notes

Store leftover cupcakes in an airtight container in the fridge for up to 3 days, frosting before serving.
