  • 1/2 cup unsweetened cocoa powder

  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1/4 cup milk
  • 8 ounces mascarpone cheese, chilled
  • 1/2 cup heavy cream, chilled
  • 1/4 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon coffee liqueur, optional
  • 1 teaspoon cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, mixing well after each addition; stir in the vanilla extract.
  5. Combine the brewed coffee and milk in a measuring cup.
  6. Mix the dry ingredients and coffee-milk mixture into the butter mixture alternately, starting and ending with the dry ingredients.
  7. Fill the muffin tin with the batter, filling each about two-thirds full.
  8. Bake for 18–20 minutes or until a toothpick comes out clean.
  9. Cool completely in the tin before transferring to a wire rack.
  10. Prepare the frosting by beating mascarpone, heavy cream, powdered sugar, cocoa powder, vanilla extract, and optional coffee liqueur until stiff peaks form.
  11. Frost the cooled cupcakes and dust with cocoa powder.

Notes

Use room temperature ingredients for better blending. Store leftover cupcakes in an airtight container for up to 3 days.
