A delightful blend of creamy cheesecake and crispy churro flavors in bar form, topped with cinnamon sugar.

Ingredients

  • 1 package of graham cracker crumbs
  • 1/2 cup of sugar
  • 1/2 cup of butter, melted
  • 2 packages (8 oz each) of cream cheese, softened
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 2 eggs
  • 1 tablespoon of cinnamon
  • 1/4 cup of sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix together the graham cracker crumbs, 1/2 cup of sugar, and melted butter until fully combined.
  3. Press this mixture into the bottom of the prepared pan to create the crust.
  4. Beat the softened cream cheese until smooth and creamy.
  5. Gradually add the powdered sugar and vanilla extract, mixing well.
  6. Add the eggs one at a time, mixing until just combined.
  7. Pour the cheesecake mixture over the prepared crust, smoothing it out.
  8. Combine the 1/4 cup of sugar and tablespoon of cinnamon, then sprinkle generously over the cheesecake.
  9. Bake for 30-35 minutes, or until the center is slightly jiggly.
  10. Cool completely before slicing into bars and serving.

Notes

Serve with vanilla ice cream or caramel sauce for an extra treat. Store in the refrigerator for up to a week or freeze for up to 3 months.
