  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan to ensure your cheesecake bars come out easily.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until crumbly. Press this mixture firmly into the bottom of the prepared pan.
  3. In another bowl, beat together the softened cream cheese and 1 cup of sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla, cinnamon, and salt until combined.
  4. Pour the cheesecake mixture over the graham cracker crust in the pan. Use a spatula to spread it evenly.
  5. Place the pan in the preheated oven and bake for 25-30 minutes, or until the filling is set with a slight jiggle in the center.
  6. Allow the cheesecake to cool at room temperature before transferring it to the refrigerator. Chill for at least 4 hours.
