  • Juice of 2 limes

  • 1 cup jasmine or basmati rice
  • 2 cups water or broth
  • 1 cup bell peppers, sliced
  • 1 cup cucumber, diced
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. Combine shrimp, lime juice, garlic, cilantro, salt, and pepper in a bowl. Let marinate for 15 minutes.
  2. Cook rice according to package instructions.
  3. Heat olive oil in a skillet over medium heat. Add marinated shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Assemble the bowl with rice as the base, topped with shrimp, bell peppers, and cucumber. Garnish with extra cilantro if desired.
