  • 2 ripe bananas (mashed)
  • 1/2 cup Greek yogurt
  • 1/3 cup peanut butter
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mash the ripe bananas until smooth.
  3. Add the Greek yogurt, peanut butter, honey, egg, and vanilla extract to the bananas. Mix well until combined.
  4. Whisk together the oat flour, cinnamon, and baking powder in a separate bowl.
  5. Combine the dry ingredients into the wet mixture until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Use very ripe bananas for the sweetest muffins. If you don’t have oat flour, blend rolled oats until fine.
