Ingredients

  • 1 cup jasmine rice
  • 1 lb chicken breast, diced
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Toppings: sliced avocado, chopped cilantro, lime wedges, sliced bell peppers

Instructions

  1. Rinse the jasmine rice under cold water and drain.
  2. In a pot, heat the olive oil over medium heat and sauté the garlic and ginger until fragrant.
  3. Add the diced chicken breast to the pot, season with salt and pepper, and cook until browned.
  4. Stir in the coconut milk, chicken broth, and rinsed rice.
  5. Bring to a simmer and cover, reducing heat to low, cooking for 15-20 minutes until the rice is tender.
  6. Fluff the contents with a fork and serve in bowls, topped with your favorite garnishes.

Notes

For meal prep, cook a double batch and freeze half. Store leftovers in an airtight container for up to 3 days.
