  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups green cabbage, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and minced garlic to the pot, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Place the chicken breasts into the pot, browning them on both sides for about 5 minutes.
  4. Pour in the chicken broth, ensuring the chicken is fully submerged.
  5. Sprinkle in the dried thyme, oregano, salt, and pepper. Stir to combine.
  6. Incorporate the chopped cabbage, sliced carrots, and chopped celery into the pot. Stir well to combine all the ingredients.
  7. Bring the soup to a boil, then reduce the heat and cover the pot to let it simmer for 30 minutes.
  8. Remove the cooked chicken from the pot and shred it using two forks.
  9. Return the shredded chicken to the pot, taste, and adjust the seasoning with more salt and pepper if needed.
  10. Ladle the soup into bowls and garnish with fresh parsley if desired.
