Delightful brownies using cottage cheese and almond flour that are rich, fudgy, and guilt-free.

Ingredients

  • 1 cup cottage cheese (2% or 4% fat)
  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup pure honey or maple syrup
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. Blend the cottage cheese, eggs, honey or maple syrup, and vanilla extract until smooth.
  3. Whisk together the almond flour, cocoa powder, baking powder, and a pinch of sea salt.
  4. Combine the wet and dry mixtures and stir until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Cool for 20 minutes before slicing into squares.

Notes
