Ingredients

  • 3 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 cup blueberries
  • Sweetener to taste (like erythritol or stevia)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese, eggs, and sweetener until smooth.
  3. Whisk together the almond flour, baking powder, and salt in another bowl.
  4. Combine the wet mixture with the dry ingredients; stir gently until just combined.
  5. Fold in the blueberries gently.
  6. Spoon the mixture onto the lined baking sheet in small mounds.
