A comforting and nourishing egg bake made with cottage cheese, spinach, and cheese that’s perfect for breakfasts or brunch gatherings.

  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chopped spinach (fresh or frozen)
  • 1/2 cup diced onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter (for greasing)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil or butter.
  2. Whisk together the eggs, cottage cheese, garlic powder, salt, and pepper in a large bowl.
  3. Stir in the shredded cheese, chopped spinach, and diced onions until well combined.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 25-30 minutes until the eggs are set and the top is lightly golden.
  6. Allow to cool slightly before slicing and serving.

Notes
