A delightful fusion of protein and flavor, these Cottage Cheese Egg Bites make a perfect breakfast or snack.

Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup cooked and crumbled bacon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Non-stick cooking spray or oil (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with non-stick cooking spray or oil.
  3. Prepare the egg mixture by whisking together the cottage cheese, eggs, salt, pepper, garlic powder, and onion powder.
  4. Add the crumbled bacon gently into the mixture.
  5. Fill the muffin tin, pouring the mixture evenly into each cup, filling about 2/3 full.
  6. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  7. Cool slightly before removing from the muffin tin.
  8. Enjoy warm or store in the fridge for meal prep.

Notes

For an extra fluffy texture, add an extra egg. Feel free to swap out the bacon for other cooked meats or vegetables.
