  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1/2 cup honey
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend 1 cup of cottage cheese until smooth.
  3. Mix in a large bowl, 2 cups of almond flour, 2 tablespoons of coconut flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  4. Whisk together 2 large eggs, 1/2 cup of honey, 3 tablespoons of lemon juice, 1 tablespoon of lemon zest, and 1 teaspoon of vanilla extract.
  5. Combine the wet mixture into the dry ingredients and stir gently.
  6. Fold in the blended cottage cheese until well incorporated.
  7. Pour the batter into a lined baking dish and spread evenly.
  8. Bake for 25-30 minutes until a toothpick comes out clean.
  9. Let cool in the dish for about 10 minutes before transferring to a wire rack.
