A delightful twist on a classic mac and cheese, made with cottage cheese for a creamier texture and packed with protein.

  • 2 cups cottage cheese
  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: breadcrumbs, parsley

Instructions

  1. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  2. In a large mixing bowl, combine cottage cheese, shredded cheddar cheese, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Add the cooked macaroni to the cheese mixture and gently fold until coated.
  4. Preheat the oven to 350°F (175°C).
  5. Pour the macaroni and cheese mixture into a greased baking dish and top with breadcrumbs if desired.
  6. Bake for 20-25 minutes until the cheese is bubbly and the top is golden brown.
  7. Let it rest for a minute, garnish with parsley if desired, and serve warm.

Notes

Feel free to add cooked bacon bits or steamed broccoli for extra flavor. You can also use gluten-free pasta for a gluten-free version.
