Ingredients

Scale
  • 8 oz bowtie pasta
  • 1 lb boneless skinless chicken breast, cut into bite-size pieces
  • 2 cups broccoli florets
  • 4 tbsp unsalted butter
  • 3 cloves minced garlic
  • 1 tsp ranch seasoning mix
  • 1 lemon, zested and juiced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil, add bowtie pasta, and cook according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 5–7 minutes.
  3. Push the chicken to one side of the skillet, add butter, and let it melt. Stir in minced garlic and ranch seasoning, cooking for about 1 minute until fragrant.
  4. Add broccoli florets, lemon zest, and lemon juice to the skillet. Toss to coat everything evenly, and cook until the broccoli is tender-crisp, about 3–4 minutes.
  5. Add the cooked pasta to the skillet and toss everything together to combine. Stir in the Parmesan cheese, chopped parsley, and chives until evenly distributed.
  6. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
  7. Serve your Cowboy Butter Lemon Bowtie Chicken with Broccoli hot and enjoy the delightful flavors!

Notes

For an extra special treat, serve with a light side salad or crusty garlic bread. Pairs nicely with crisp white wine.
